Chocolate mud cake









This is becoming one of my favorites - chocolate mud cake (or kladdkaka as Swedes call it). So easy to make and oh so good... Same recipe as before, but this time I added some calvados which gave the cake a slight fruity note. 

INGREDIENTS
Makes one 11cm x 25cm rectangular cake

100g butter, melted and cooled
2 eggs
2 dl (160g) sugar (I took about 100g granulated sugar and about 50g muscovado)
1 dl (60g) flour
1 tablespoon vanilla sugar
3/4-1 dl (50g) cocoa powder
2 tablespoons of strong coffee
2 tablespoons of calvados
Powdered sugar and berries for decoration.












PREPARATION METHOD

  • Preheat the oven to 175° C. Grease the pan with butter and coat it with a thin layer of cocoa powder (so the cake does not stick to the pan).
  • Mix together all the ingredients and stir gently until there are no lumps (but do not whisk). The batter will be thick.
  • Pour the batter into the pan and put into the oven for 19 minutes or until edges are set while center still looks gooey. Cool and serve decorated with powdered sugar and berries.
