Do you like banana bread? If you do, you should like
these – a sort of banana bread in the form of pancakes. Absolutely delicious,
even without any toppings!
Ingredients:
2 eggs
100g all-purpose flour
100g all-purpose flour
100g whole wheat flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
4 tablespoons butter, melted and cooled
½ teaspoons vanilla extract

¼ teaspoons ground cinnamon
⅛ teaspoons ground nutmeg
2 ripe bananas, mashed
½ cup chocolate chips
Preparation method:
- Whisk together all the dry ingredients in a large bowl. In a separate bowl or jug, lightly whisk together the buttermilk and eggs, then whisk in the melted butter and add mashed bananas.
- Pour the liquid mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Let the batter stand for a few minutes.
- Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, spoon 2 tablespoons batter per pancake into the pan. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown.
- Serve with berries, maple syrup and a sliced banana, if you like.
