Do you like banana bread? If you do, you should like these – a sort of banana bread in the form of pancakes. Absolutely delicious, even without any toppings!

Ingredients:
2 eggs
100g all-purpose flour
100g whole wheat flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
4 tablespoons butter, melted and cooled
½ teaspoons vanilla extract
¼ teaspoons ground cinnamon
⅛ teaspoons ground nutmeg
2 ripe bananas, mashed
½ cup chocolate chips


Preparation method:
  1. Whisk together all the dry ingredients in a large bowl. In a separate bowl or jug, lightly whisk together the buttermilk and eggs, then whisk in the melted butter and add mashed bananas.
  2. Pour the liquid mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Let the batter stand for a few minutes.
  3. Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, spoon 2 tablespoons batter per pancake into the pan. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown.
  4. Serve with berries, maple syrup and a sliced banana, if you like.
