Chocolate mud cake









This is becoming one of my favorites - chocolate mud cake (or kladdkaka as Swedes call it). So easy to make and oh so good... Same recipe as before, but this time I added some calvados which gave the cake a slight fruity note. 

INGREDIENTS
Makes one 11cm x 25cm rectangular cake

100g butter, melted and cooled
2 eggs
2 dl (160g) sugar (I took about 100g granulated sugar and about 50g muscovado)
1 dl (60g) flour
1 tablespoon vanilla sugar
3/4-1 dl (50g) cocoa powder
2 tablespoons of strong coffee
2 tablespoons of calvados
Powdered sugar and berries for decoration.

Sunday brunch

Lust Sunday we had a an amazing brunch at Riddersviks Gård with our friends, followed by a nice walk.  Riddersviks Gård is an elegant manor house just outside Stockholm built in 18th century, now serving as a little hotel and a conference center.

Ricotta pudding





A couple of these individual ricotta puddings make a very nice breakfast. You can make them with any kind of berries or fruit. I made mine with bananas and with orange peels from home-made orange marmalade. The original recipe is from Belonika's Recipes.

Ingredients
(for six 8-cm ramekins)
250g ricotta cheese
100g sour cream
2 eggs
2 tablespoons corn starch
2-3 tablespoons sugar
Fresh berries or fruit

Chili chocolate cake



I already wrote that I love chocolate with chili flavour. Lindt Excellence Chili is just one of the best chocolates I’ve ever tasted. It just has the right proportion of cocoa (49%) and sugar, in my opinion. And the extract of chili pepper makes it totally irresistible. This chocolate made me want to explore different chili-chocolate recipes, like this cake for example.

It is a very simple recipe with minimum ingredients. The amount of chili here is really small and you taste just a mild hint of it. I will add a bit more next time!  Needless to say, you can skip chili altogether if you don’t like it and you will get just a simple chocolate cake. The original recipe can be found here.

Bread upma




Here's a quick bread and egg brunch recipe from Biju which is very tasty and easy to prepare on those lazy late weekend mornings. It is inspired by upma - a popular South Indian breakfast dish. Give it a try!

Ingredients
Serves 2

1/3 baguette - preferably a day or two old sour dough loaves, cut into small cubes
2 eggs
1 medium size onion, chopped
1 green chilli, chopped
1 big sized tomato, cut into small cubes
1 small carrot, finely grated
3 mushrooms, sliced (we used champignons)
½ teaspoon finely minced ginger
¼ teaspoon cumin seeds
¼ teaspoon black mustard seeds
Salt to taste
1 tablespoon oil
Coriander or parsley leaves to garnish
